20cm loose-bottomed cake tin

Put the crushed biscuits into a bowl with the melted butter. Mix it together thoroughly, then press the mixture into the base of your tin. Chill for ten minutes.

Pour the condensed milk into a large bowl. Add the soft cheese and the majority of the lemon zest and whisk together. Mix in the lemon juice (it will thicken!) and pour into the tin. Chill for 2 hours.
Step 4 of 4
To serve, take the cheesecake out of the tin and place onto a plate. Warm the lemon curd with 1tbsp water and then drizzle over the cheesecake, finish with the rest of the lemon zest.

Rated 4 out of 5 by Lisa30 from Great cheesecake Made this recipe, stuck to all measurements and ingredients, set it overnight to be sure, the cake tasted beautiful however one thing is when cutting was quite hard as it didn't full set like a cheesecake should, so fell apart abit but no one complained so not really a biggie. Might just add some gelatin next time. Also quite sweet!

Even the biscuit crumb I double up and this really helps when it comes to slicing and serving - it really keeps the slices solid and together. I also use 3/4 shortcake biscuits and1/4 digestive because I prefer this combination. But overall I love this recipe. I do have a question for Carnation though - could I use Light Condensed Milk and Philadelphia Light in this recipe for a healthier version? Would this affect how it sets?
